The oil comes first

Most pickle makers buy their oil in a tin. We don't. Every batch of Avadh Rasoi begins with raw mustard seed going into the press — cold-pressed, unrefined, never blended. It is the single decision that shapes everything that follows.

Everything is cut by hand and salted, left to draw out its water, then spiced with whole mustard, fennel, fenugreek, nigella and chilli — roasted and ground for that batch alone. The pickle then sits in the sun until it is ready. Days, sometimes weeks.

We keep our lots deliberately small. It means we occasionally run out. It also means we could not take a shortcut even if we wanted to.

Made in Ayodhya, delivered in Bangalore

Our pickles are made in a home kitchen in Ayodhya, Uttar Pradesh, using recipes handed down in the family. Right now we deliver fresh, exclusively across Bangalore — packed in glass, never plastic.
